My Favorite Domestic Seafood Recipe

Cooking home style seafood dishes is great because they taste better and much healthier. I grow up in the Philippines where we always have fresh fish or any seafood. Well no wonder because we are surrounded and close to the ocean. Almost everyday we eat fish either its fresh fried fish or dried fish. One of my favorite recipe is Sweet and Sour Fish we called it (Escabeche) in the Philippines, its taste so yummy. So for those of you out there who like seafood, I will share you this recipe and I bet you will love it. This dish might be a great contender too in the fifth annual great American seafood Cook off this coming August 2-3 at the New Orleans Morial Convention Center within the Louisiana Food service EXPO and the Gulf Coast Seafood Pavilion. This event is so exciting it is one of America’s most prestigious culinary competitions, with excellent chefs from different state in the US will walk away with the title of King or Queen of American Seafood. A wonderful event that you don't wanna miss. The recipe of sweet and sour fish is the following:

Ingredients:
1 lb cleaned and scalled red snapper, tuna or fish steaks
1 tsp salt, for dredging
1/2 cup cooking oil
Sweet and Sour sauce:
1/2 cup fine sugar
1/2 cup vinegar
1/2 cup water
3 tbsp tomato ketchup
1 small carrot
1 medium green pepper
1 medium red or yellow pepper
1 medium cucumber, thinly slice
1/2 tbsp cornstarch dissolve in 2 tbsp water

Preparation:
1. Make 2 slits each side of the fish and put salt all over the fish. Heat the oil in the pan and fry the fish until it turns brown or fully cooked. Remove from the pan and put it in the serving platter.
2. Make the sweet and sour sauce, combine the water,sugar, vinegar and tomato ketchup in a saucepan. add the carrots and cook for about 5 minutes, then add the bell peppers and cucumber. Simmer for about 3 minutes until vegetables is tender then add the cornstarch mixture and simmer until sauce thickens. Remove from heat and pour the sweet and sour sauce over the fish. If you like, decorate with any fresh herbs and serve it with rice.
